CAREFUL HARVESTING & POD SELECTION

The journey to exceptional cocoa begins with precise harvesting. Only fully ripe, healthy pods are selected - identifiable by their rich yellow or orange color. Our farmers expertly identify the perfect harvesting moment, ensuring each pod has reached optimal ripeness for the best flavor development. Through our partnerships with experienced Ondo State farmers, we maintain strict selection standards at this crucial first stage.

MASTERFUL FERMENTATION

Fermentation is where the magic happens - transforming raw cocoa beans into the foundation of fine chocolate. Our controlled fermentation process typically spans 5-7 days, during which the beans develop their characteristic chocolate flavor precursors. We maintain precise temperature monitoring and regular turning of beans to ensure uniform fermentation. This critical stage defines the beans' final flavor profile and quality grade.

PRECISE DRYING & QUALITY CONTROL

After fermentation, proper drying is essential for long-term quality preservation. Our beans are carefully sun-dried on elevated platforms, reaching the optimal moisture content of 7-7.5%. During this stage, we conduct rigorous quality checks including:
Cut tests for internal color assessment
Moisture content verification
Bean size grading
Defect analysis Each batch must meet our strict quality parameters before being approved for export..
