Our controlled fermentation process typically spans 5-7 days, during which the beans develop their characteristic chocolate flavor precursors. We maintain precise temperature monitoring and regular turning of beans to ensure uniform fermentation. This critical stage defines the beans' final flavor profile and quality grade.
After fermentation, proper drying is essential for long-term quality preservation. Our beans are carefully sun-dried on elevated platforms, reaching the optimal moisture content of 7-7.5%. During this stage, we conduct rigorous quality checks including:
Cut tests for internal color assessment
Moisture content verification
Bean size grading
